From there it went into stainless steel, where it finished fermenting spontaneously and aged for the full nine months before bottling in June 2025. Another nine months in bottle followed before release. Unfiltered, unfined, no added sulphur — only the 13mg\/l naturally produced during fermentation makes it onto the label.\u003c\/p\u003e\n\u003cp class=\"font-claude-response-body break-words whitespace-normal\"\u003eThis is real Riesling, and it shows it on the nose: youthful, full of energy, practically vibrating with varietal character. The palate is more direct — leaner, \"simple\" by the winemaker's own admission — but that's not a knock.
