Blanc de Blancs made of Grüner Veltliner and Sauvignon Blanc (50:50). The Veltliner is hand harvested from a 36 year-old vineyard while the Sauvignon Blanc comes from a 35
year-old vineyard. Both are grown over loess soils.Wine matured as single-varietals 1 – 2
years in stainless steel tank on lees. Secondary fermentation in bottles with 1 1⁄2 years on lees aging. No dosage. Wine is vegan

Fresh nose of green apples and notes of freshly mowed grass. Refreshing taste with mineral complexity and great supporting acidity.
Pairing with freshly shucked oysters on Saturday afternoon.
