Single varietal Riesling from 20 years old vineyard with bedrock of tuff. Hand harvested grapes were destemmed, crushed and lightly pressed after 1-2 days of skin contact. Spontaneous fermentation took place in old oak barrels where wine stayed 14 months. Wine was then transferred to a stainless steel tank, where it finished maturation for another 6 months on fine lees. Wine was bottled with a small dose of sulphites.
Smoky nose shows vividly the volcanic terroir. Same smoky notes are showing in the taste supported with joyful acidity.
Still white wine. Wine is vegan.
