The name is the whole philosophy in a word. Pourboire — a tip, a gratuity, something given freely. Jon and Elizabeth Bowen named it simply because that's why they made it: to drink.
A blend of Carignan, Grenache and Syrah, it is incredibly fresh and vibrant, with blackcurrant and plum at its core, and an undercurrent of crushed stones and gravel. The tannins are fine and well-integrated, and despite its concentration the wine has a lively, energetic feel. No added sulphur, no shortcuts.
Hidden in the rugged limestone hills of the High Corbières, on the border between Languedoc and Roussillon, the domaine benefits from a microclimate where cool maritime air meets the heat and dryness of the interior — and it shows in the glass. Organically farmed, hand-harvested, and made with the fewest possible interventions.
