The history of winery started in the year of 1898 when Franitišek Kopřiva, the great-granddad of Jan Stávek formally established the wine production in the village Němčičky [Nehm-chee-chkyh] of south Moravia. His production was supplied to wine bars and restaurant both in Prague and Vienna.

The sad norm of communism saw the winery be collectivized, however the family was able to restitute it and continue the rich family winemaking history.

Jan Stávek, the fourth generation and the current cellar master, finished his enology studies with dissertation, and continues lecturing new generation of winemakers at the National Wine Academy in Valtice. His big focus is Blaufränkisch variety, which got him an European wide recognition and many accolades.

Winey J.Stávek is fully bio certified, making wines from local varieties sourced from own vineyards. Low intervention practices are observed both in vineyards and cellars. Fermentation of wines is either spontaneous or for selected cuvees with yeast strains selected from vineyards. Minimal to no filtration, and no finning of the wines in combination with a very small addition of Sulphites at the bottling makes wines from this winery true to the terroir and a real joy to drink.  Annual production circa 60,000 bottles.
