Monology – Krefty-B 2025 South Moravia, Czech Republic | White
Four harvests in, and Ondřej Chudoba knows exactly what Krefty looks like as a white wine. The 2024 vintage was the moment of clarity — the point where the vineyard's character clicked into focus — and since then it's been a matter of refinement rather than reinvention.
Krefty's fertile loamy soils don't give much natural acidity, so this year the fruit was picked a few days earlier than usual to hold onto what was there. Pinot Gris spent 3–4 days on skins; Chardonnay just one. Both aged entirely on gross lees, split between oak barrels and stoneware vessels — a combination Ondřej has come to see as essential for balance at this site. At least half the fruit needs something other than barrel, or the wine closes in on itself.
No botrytis. No new oak. Those are the rules now, learned over four vintages of paying attention.
The result is a white with quiet confidence: textured from the skin contact and lees aging, with the freshness that comes from harvesting at the right moment, and a kind of mineral stillness that feels very much like Krefty.
Drink it: with roast chicken, creamy pasta, grilled white fish, or a long lunch that doesn't need to be anywhere in a hurry.
