Blanc de Blancs made of Grüner Veltliner and Sauvignon Blanc (50:50). The Veltliner is hand harvested from a 33 year-old vineyard while the Sauvignon Blanc comes from a 32
year-old vineyard. Both are grown over loess soils. Wine is vegan.
Base wine from 2017. Matured on lees for 36 months.
Fresh nose of green apples and notes of freshly mowed grass. Refreshing taste with mineral complexity and great supporting acidity.
Pairing with freshly shucked oysters on Saturday afternoon.
