Monology – Krefty-N 2024 South Moravia, Czech Republic | Red | Lightly Sparkling
There's a bottle of Krefty-N and then there's an explanation of Krefty-N — and the two feel almost at odds with each other. Because on paper, this shouldn't work. Dornfelder: a grape planted for its deep colour and easy spring drinking, not exactly the stuff of complexity. But winemaker Ondřej Chudoba had a different idea.
Harvesting the Dornfelder early alongside Neronet and Sauvignon Blanc, he pulled the wine somewhere entirely unexpected — wild aromatics, firm acidity, real tannin. The three varieties macerating at different lengths (3 to 12 days), then pressed and blended, before secondary fermentation adds a subtle, unforced fizz. Not sparkling wine. Something rawer than that. Gentle carbonation, low pressure under the crown cap, no theatrical pop — just texture and life.
From the Krefty vineyard in Rakvice, planted in 2005 on fertile loamy soils and farmed organically. Aged in stainless steel to keep everything pure and direct. Hand-picked, spontaneous fermentation, no fining, no filtration.
Drink it: slightly chilled, with charcuterie, earthy mushroom dishes, or honestly just on its own while you figure out what you're tasting.
Alcohol: 11.5% abv.
