Cabernet Sauvignon as a rosé is a confident choice. The variety has the structure and pigment to go deep if you let it — so making something light, fresh, and genuinely easy to drink from it is a deliberate act of restraint.
From the Pustatina vineyard in Dolné Plachtince, hand-harvested at 21.5°NM. Destemmed and pressed directly — no skin maceration, no extraction — which is how you get the colour to behave and keep the palate clean. Estate-selected yeast, fermented into stainless steel, then eight months of ageing in a 7,500-litre tank before bottling in May 2024. Plate filtration, sulphur to 45mg/l total SO2.
The winemaker's own description is hard to improve on: dry, fresh acidity, fruity and light. Simple, readable. That's exactly what this is, and exactly what a good rosé should be — something that doesn't demand your full attention but rewards it anyway. The Cabernet Sauvignon backbone gives it a little more presence than your average pale Provence-style pour, without tipping into anything heavy or serious.
Drink it with: grilled prawns, watermelon and feta, light pasta dishes, or anything that benefits from something cold, pink, and uncomplicated.
