
Hand harvested grapes of Riesling and Noria (Riesling x Semillon) have been de-stemmed and crushed. After a 3 days maceration, wine spontaneously fermented in stainless steel tank, in which continued the maturation for a period of 7 months on fine lees with 3 battonages.
Wine is unfined, unfiltered with 25 ppm of sulphur added at bottling.
The nose shows Smillon - herbs, yellow fruit and a bit of smoke. Enticingly aromatic skin-contact white with superb acidity and salty finish. Almost too easy to drink
Pairing with herb-crusted chicken. White fish with beurre blanc. Ceviche. Asian cuisine with mild to moderately spicy profile. Lightly smoked cheese. Hell, this wine works with everything!
Alcohol: 13.5% vol. Sulphites added: 25 ppm.
