Hand harvested grapes of Pinot Noir have been de-stemmed and crushed. After a 24 hours maceration, wine spontaneously fermented in stainless steel tank, in which continued the maturation for a period of 16 months on fine lees.
Wine is unfined, unfiltered with 30 ppm of sulphur added at bottling. Wine is vegan.
Short, gentle maceration captures the energy and elegance of Pinot Noir and tanginess of the volcanic soil it grew on. Smoky notes on the nose show the terroir vividly. Generously spicy yet succulent, this is a rosé made for ageing, calling for a bigger glass.
Pairing with a roast beef. Mediterranean dishes of all sorts – fish soup, mezze starters, grilled prawns, meat and veg skewers, raw tuna and smoked fish.
Alcohol: 12.0% vol. Sulphites added: 30 ppm.
